Herbert and Carmen Zillinger

The Weinviertel in the north-east of Lower Austria is considered the largest wine-growing region in the country. Here, the Herbert Zillinger winery cultivates around 16 ha in the Vienna Basin. The most important sites are called Hirschenreyn and Kalkvogel.

The climate is considered Pannonian, which means: the temperature development is continental, the rainfall oceanic. Loess, loam and calcareous sandstone characterise the soils on which mainly Grüner Veltliner, but also Sauvignon Blanc, Chardonnay or Welschriesling grow.

Herbert and Carmen Zillinger run the winery together - always with the aim of "creating truly unique wines and ignoring current fashions." The Zillinger wines are natural. Nothing is added or taken away during the entire vinification process. Only a minimum of sulphur dioxide is added, if necessary, before bottling for stabilisation. All wines are bottled unfiltered and clarified as much as possible through natural sedimentation.

in 2016, they switched to biodynamic production to make the wines even "better and more alive". "But perhaps the most important driving force of all: We don't want harmful chemicals. Not in the air, not in the food and not in the wine. For the sake of our children, our staff and ourselves. Biodynamic as a logical consequence." 2017 was the first certified vintage. The winery is a member of the respekt-BIODYN association.
