OMINA ROMANA Cabernet Sauvignon 2015
A hillside location facing the sea and the sun and constant cooling/drying by thermal air are the basis for the Cabernet Sauvignon from Omina Romana. Manual harvesting with strict selection of the grapes and a further selection round after destemming bear witness to the extreme quality standards of the estate, which has been under German management for less than two decades. These standards are also reflected in the cellar: temperature-controlled fermentation in stainless steel and wood, 18 to 22 months ageing in French oak, followed by a further 1.5 years in the bottle. All this creates a Cabernet with a beguilingly round aroma: redcurrant, dark cherries, smoked bacon and cedar wood, a little graphite. Now optimally matured with potential for further years.
