We start the aperitif with an excellent Pinot sparkling wine from Gusbourne in the south of England, the new star in the sparkling wine firmament. Seafood, fish and white meat are accompanied by an excellent "Meursault" from the time-honoured house of Louis Latour, while the "Gran Reserva 904" from the Spanish wine icon La Rioja Alta adds the right accent to the meat course, game or umami-rich mushroom course.
