Domaine Stéphane Tissot Chârdonnay Patchwork Jura 2023

The origin of this unique Chardonnay is evident from its name, as the grapes come from a patchwork of different plots. 60% grow on loamy soils, 40% on calcareous soils. Yields are low, the biodynamically produced grapes ferment spontaneously, the wine is aged reductively for one year in used barriques, and bottling takes place without filtration or the addition of sulphites. This perfectly balanced natural wine is reminiscent of cellar apples and apple peel, pears and peaches, lemon zest and grapefruit, nut butter and a hint of vanilla. On the palate, the Chardonnay offers energy, tension, a mouth-watering saltiness and a vibrant minerality with fine spice.
