Sweet wines are no longer so "in". In our opinion, this is a big mistake, because Sauternes is one of the greatest pleasures you can experience. Especially when it is used in a more flexible way than with the usual, quite grandiose, but also very rich wine and food combinations such as foie gras or blue cheese.
In addition, Sauternes wines are now less opulent. In young vintages, their fresh and elegant style predestines them to be enjoyed solo before a meal.
What we would like to recommend is to simply serve young Sauternes as an aperitif, i.e. very cold, as an alternative to sparkling wine. We recommend the 2ème Grand Cru Classé Château Doisy Daëne 2019 and the 1er Grand Cru Classé Château Coutet 2020 from the Barsac sub-appellation.
The second option that we strongly recommend is to offer oysters with Sauternes. This shellfish variety, which is particularly popular in Bordeaux, is often served with Muscadet, Sancerre or Aligoté, but the true, ultimate combination is mature Sauternes with oysters.
This is a flavour explosion that is rarely experienced. The recommended wines are also suitable here, but a 1997 Château Rieussec is sure to be unforgettable!
