Maison Aguila is part of the Sieur d'Arques co-operative, which produces around 80% of the wine in Limoux. They are the pioneers of the region and the undisputed masters of sparkling wine production in the Languedoc.
What began in 1531 is continued today by the winegrowers of the Sieur d'Arques co-operative and the House of Aguila. They have continued to refine their sparkling wines, especially the crémants. Aguila stands for the eagles that have been circling over the vineyards of the Haute Vallée de l'Aude for thousands of years. The co-operative is located at the foot of the Pyrenees. There are four major terroirs in the Limoux region: Océanique, Autan, Méditerranéen and Haute Vallée, at altitudes of up to 700 metres and on soils consisting mostly of clay and limestone.

While the original sparkling wines were still produced according to the „méthode rurale“ or „méthode ancestrale“ as „petillant naturel“, in which the fermenting wine was bottled where it could continue to ferment, the House of Aguila has shifted to sparkling wines according to the „méthode traditionnelle“, in which a second fermentation takes place in the bottle.
The grape varieties used are Chardonnay, Chenin Blanc, Mauzac and Pinot Noir.
