"True-to-style wines with longevity and clear character from Poysdorf's soils. That is our typical Weinviertel style." Martin and Andrea Hirtl have a clear idea of their product and also put it into practice - on the family vineyard, which looks back on a 300-year history.

The leading variety in the wine-growing region is Grüner Veltliner, for which the designation Weinviertel DAC (Districtus Austriae Controllatus) guarantees strictly tested quality and regionally typical varietal characteristics. At the Hirtl winery, the grapes grow on one third of the 20 hectares of land. Grüner Veltliner is ideally suited to medium to light, but not too dry soils - the Poysdorf soil proves to be ideal. White Burgundy, Riesling and red wines are also part of the Hirtl family tradition.

Diverse soil greening, the use of beneficial insects against pests or grape splitting instead of green harvesting ensure, among other things, a healthy ecosystem in the vineyards, which have been cultivated by Martin and Andrea since 2001.

In the cellar, variety-specific processing is Martin Hirtl's top priority. "Each grape is marked by its typical character, which must be preserved in every case." In the case of white wine, the grapes are processed immediately after harvesting to avoid any oxidation. Storage and maturation take place exclusively in stainless steel tanks. The red wine grapes are fermented directly on the mash. The maturation process in large wooden barrels or in new French oak barriques is permanently controlled.
