When Julia and Christoph Wachter took over their parents' winery in 2008, hardly anyone would have expected the Wachter Wiesler winery to become one of Burgenland's top wineries within just a few years. But that is exactly what happened, and for good reason.
The most important reason for the winery's meteoric rise is probably that the siblings Christoph and Julia had a vision and realised it in their very own way. Their motto is: "There are things that are worth taking an uncompromising stance for. Nature, family, friends - and Blaufränkisch." After taking over the management of the winery founded by Béla Wachter and Jóska Wiesler in 1999, the two switched to organic viticulture, which was certified in 2015. In addition to avoiding chemicals in the vineyard, this also means that no additives are added to the wines at the winery. This is followed by fermentation with the vineyard's own yeasts, gentle processing of the grapes and long ageing in wooden barrels of 600 litres or more. The wines are neither fined nor filtered. Only small amounts of sulphites are added to the wines.
The pair's focus is clearly on bringing the terroir of Deutsch Schützen and Eisenberg into the bottle as unadulterated as possible. And it's worth it, because the soils of both sites are unique with their mixture of green slate, phyllites and, above all, the deep, iron-rich loam and clay soils that gave the Eisenberg its name - although the soils in Deutsch Schützen are even more iron-rich. The vast majority of the 16 vineyards in the middle of the partly steep, hilly landscape are planted with Blaufränkisch. There are also smaller quantities of Chardonnay, Traminer, Welschriesling and Zweigelt.
