Silvaner grape variety

Silvaner is a white grape variety that originated in Austria but is now most widespread in Germany, where it plays an important role alongside Riesling. Other noteworthy stocks can still be found in Alsace in France. The wines are known for their freshness, minerality and sometimes strong, earthy character. Exuberant fruit is not usually the Silvaner's thing, but a certain herbaceousness and minerality characterised by the terroir are. Silvaner is a grape variety that is able to reflect its origin like few others. Delicate elegance or powerful, almost oily heaviness are varieties that - in addition to the art of the cellar master - are primarily determined by the geology of the vineyard. As an accompaniment to food, the combination with asparagus is almost proverbial, but depending on the type, Silvaner also cuts a very fine figure alongside freshwater fish. Boiled beef also finds a congenial partner in lightly matured Silvaner wines.

Frequently asked questions (FAQ) about Silvaner wine

What are the typical flavours of the Silvaner grape variety?

The Silvaner grape variety is not a "loudspeaker grape" like Sauvignon Blanc, for example. It is characterised by rather subtle, fine aromas. Typical flavours include notes of fresh hay, herbs, green apple and often a delicate earthy spiciness. In more mature varieties, there are also hints of yellow pear or quince.

How does the acidity structure of the Silvaner grape variety compare to other white wines?

One of the greatest advantages of the Silvaner grape variety is its moderate, mild acidity. While a Riesling is often very tangy and demanding, Silvaner is much softer and creamier on the palate. This makes it particularly palatable for many wine drinkers.

Why is the Silvaner grape variety considered the classic accompaniment to asparagus?

It is the "perfect match" in gastronomy! As the Silvaner grape variety has a mild acidity, it does not mask the subtle bitter notes of asparagus. In addition, the herbaceous notes of the grape harmonise wonderfully with the earthy flavour of the vegetables.

What other dishes go perfectly with the Silvaner grape variety?

In addition to asparagus, the Silvaner grape variety is an all-rounder. Try it with trout Müllerin, summer salads or - in classic Franconian style - with bratwurst. More powerful Silvaner even holds its own with white meat such as veal or poultry in cream sauces.

What is the main difference between the Silvaner grape variety and Riesling?

In a nutshell: Riesling is the prima donna (lots of fruit, lots of acidity, very loud), while the Silvaner grape variety is the prudent diplomat. Silvaner is less acidic, less fruity and floral, but spicier and more down-to-earth.

How does the flavour of the Silvaner grape variety change with a longer ripening period?

Over the years, the Silvaner grape variety loses its primary fruit and develops fascinating secondary flavours such as honey, dried herbs and a nutty depth. The texture often becomes even creamier and softer.

Gewürztraminer

Hardly any other grape variety polarises as much as Gewürztraminer. Its name alone reveals what it is all about: intensity, spice and an unmistakable spectrum of flavours ranging from lychee, bitter orange and rose petals to marzipan. It is not a subtle wine, nor is it meant to be. Some like it, others reject the cloud of flavours.
