Hans Reisetbauer needs no less than 35 kilograms of carrots to produce one litre of carrot brandy diluted to a drinking strength of 41.5%. The sparkling clean carrots are mashed using a special process, then fermented in stainless steel tanks for between eight and ten days before finally being distilled using the classic double distillation method. The result is an enormously complex fine brandy that delights with its constant interplay between crystal-clear, highly present carrot fruit, a slight earthiness that creates complexity and depth, and a subtle, fine bitter note.
