Clüver's top Chardonnay comes from a vineyard planted in 2015 in Elgin Valley, high above the Atlantic Ocean. This is pure "cool climate'. The "Colline du Matin' was fermented and aged 50% in new French oak and 50% in second and third use barrels. It was bottled after nine months on the lees. Only the best barrels are used for this cru. The Chardonnay exudes beautiful notes of limequats, lemons and mandarins, pears and apricots, almonds, vanilla, lightly toasted nuts and brioche. On the palate, aromatic richness combines with fresh acidity, spices and salt to create a sophisticated composition.
