Champagne Pierre Boever is a small, family-run producer from Louvois, in the heart of the Montagne de Reims. Thomas and Laure have been the third generation to run the estate since 2005. The history of the Boever family, originally spelt Boëver, begins in 1847 when they settled in Champagne to grow vines. In 1946, Paulette and Gaston Boever opened their own vineyard to produce their own champagne.
Today, their grandson Thomas and his family cultivate around six hectares in premier and grand cru vineyards, predominantly with Pinot Noir and smaller proportions of Chardonnay and Pinot Meunier. The soils here consist mainly of chalk and fine marl, which gives the wines their clear structure, tension and salinity.
Champagne Pierre Boever works traditionally. This includes careful manual harvesting, slow pressing on the classic Coquard press, temperature-controlled fermentation and long ageing on the lees. The champagnes display a precise, straightforward style - pure fruit, fine flavour, a delicate perlage and a good balance of strength and finesse.
The collection ranges from the classic "Premier Cru Brut" called "Carte Blanche" to various "Grand Cru" such as "Des Dames de France", "Bastien-Thomas" and a vintage champagne. The cuvées show a clear terroir character.
