Domaine Gayda, located not far from Carcassonne, is one of the most interesting wine estates in the region thanks to winemaker Vincent Chansault and the careful modernisation by owners Tim Ford and Anthony Record. Domaine Gayda was founded in 1749 in Brugairolles, not far from Carcassonne. Not as a winery, but as a post station for travellers on the "Chemin Mouscou" at the time. The stagecoaches would change horses at the estate while the travellers rested. Gradually, the buildings of the original farm were converted into high-quality accommodation and the estate's own wine was produced. In 2004, the winery was completely modernised by the new owners Tim Ford and Anthony Record in collaboration with the talented winemaker Vincent Chansault.
For a long time, the „Arbre de Moscou“, a mighty pine tree that has since disappeared, dominated the square in front of the winery. It was so mighty that it once served as a landmark for Andean aviators such as Antoine de Saint-Exupéry. Today it houses a wine cellar and a restaurant. Wines are mainly produced from the classic Languedoc grape varieties such as Syrah, Grenache, Mourvèdre, Macabeu, Rolle, Carignan and Cinsault, but also country wines from Sauvignon, Chenin Blanc, Cabernet Franc and Viognier. In the meantime, the entire agriculture has been converted to organic farming.
