Cédric Arnaud and Fabien Gross are the two masterminds behind Domaine Villa Noria, which was founded in 2010, nestled between the Mediterranean Sea and the mountainous foothills of the Larzac terraces of the Languedoc. From the very beginning, the aim of the 90-hectare domaine was to work in a climate-neutral and organic way. Certification was therefore pursued from day one and achieved in 2013 after a three-year process.

Cédric Arnaud is responsible for the vineyards and is committed to ensuring that organic is not the end, but only the beginning of the work at the domaine. He specialises in biodiversity and has planted trees and hedges in the vineyards and on the edges, as well as dry stone walls. Although the Mediterranean climate has a largely favourable effect on the vines, the aridity of the region is increasingly causing problems. Organic farming and biodiversity in combination with the creation of a thick layer of humus in the vineyards is the decisive measure to get moisture into the vineyards.

Fabien Gross, a native of Alsace, continues the sustainable, organic approach in the cellar, where he intervenes as little as possible in the wine-making process. The winery started out with classic wines, but the LEVIN© line was added in 2024. As it was out of the question for both of them to remove alcohol from finished wines, Fabien worked for a long time on an alcohol-free fermentation process that makes full use of the aroma yield. For the wines, the grapes are harvested when physiologically ripe, but as early as possible to guarantee clear acidity with as little sugar content as possible. This is followed by cold maceration at 3°C for 12 hours with oak contact. After pressing, the must is pasteurised. Non-alcoholic fermentation takes place with the help of ten strains of bacteria and yeast, which initiate lactic acid fermentation. Without producing alcohol. In addition to the absence of alcohol, no sulphur is added. The wines are certified organic and vegan.
