For some time now, there has been a highly enjoyable renaissance of the classic Kabinett, affectionately known by its fans as "Kabi'. Wines like this one from the Saarburger Rausch from Forstmeister Geltz-Zilliken are responsible for this. There's no cheap, intrusive residual sweetness to clog up the palate here, instead acidity and sweetness dance a pas de deux full of vibrating tension. All kinds of citrus fruits do the honours on the palate alongside peach tones with great intensity and yet complete clarity, ending in a long and juicy finish. A wine that will cut a fine figure with pink veal liver sautéed in sage butter as well as with carabineros with yellow curry.
