The Antinori wine dynasty also has a vineyard in Umbria - the Castello della Sala, a medieval castle complex just 18 kilometres from Orvieto. Here, not far from the border with Tuscany, the main focus is on the cultivation of white wines from both traditional and international varieties. Like the "Cervaro della Sala'. This is an almost pure Chardonnay with a small dash (7%) of Grechetto. The Cervaro was one of the first Italian white wines ever to be aged in barriques and with malolactic fermentation - designed for long storage. The 2022 presents itself with a complex mix of Chardonnay fruit, barrique flavour and acidic freshness. A wine as elegant as its origin.
