The "Pepi' is a successful classic of the house and was named after the classic Sauvignon growing areas of Penon and Pinzon in the municipalities of Kurtatsch and Montan. It comes from calcareous and gravelly clay soils at an altitude of 450 metres. The juice was fermented at a controlled temperature of 19 ?C in small steel tanks. The wine was aged for at least six months in large oak barrels on the lees without malolactic fermentation. The "Pepi' is an intense Sauvignon Blanc with notes of elderberry and nettle, basil, tarragon, lime and lemon, gooseberries and stone fruit. The wine has a creamy yeast texture, but at the same time is juicy and fresh with a delicate grip and lively acidity. The salty finish and spicy notes make it very drinkable.
