How about a classic Piedmont truffle menu?

After introducing you to two new Piedmontese wineries in the last two weeks, the grand finale now comes in the form of a Piedmontese truffle menu, which is just the right thing to do, as now is the time for the "Tuber magnatum pico" or white Alba truffle.

We start our menu with a typical aperitivo, then move on to the antipasto, primo piatto and secondo piatto and finally the dolce. And of course we recommend the right wines to go with it.

Tip: Only use the white truffle raw by finely slicing it over the dish directly before serving. Don't use too much garlic, pepper or strong flavours - the truffle takes centre stage here. Bon appétit!

Wine recommendations for truffle dishes

Aperitivo

Our Piedmontese truffle menu starts with an aperitif in the form of a "Robiola di Roccaverano with truffle honey". This is a mild goat's cream cheese from Piedmont with a little honey, refined with truffle flavour. We serve it with an Alta Langa Blanc de Blancs from Fontanafredda .

Primo Piatto

The first course, called Primo Piatto, is dedicated to a great Piedmontese classic, the "Tajarin al burro e Tartufo Bianco". This is fresh egg pasta with up to 30 egg yolks per kilo of flour, tossed in butter and generously topped with white truffle. We chose the Langhe Nebbiolo from Fontanafredda to go with it. If it has to be Barolo here, then the Pecchenino Barolo Bussia.

Ready for an intermediate course?

Then "Carne Cruda all'Albese", thinly sliced raw beef seasoned with olive oil, lemon, salt, pepper and white truffle.

Accompanied by the Pecchenino Dolcetto Dogliani "San Luigi" DOCG 2023.

Luxurious main course combined with Barolo

For the second course, we opted for "Uovo in camicia su fonduta di Fontina e Tartufo". This is a poached egg on a warm fontina cheese fonduta, garnished with fresh truffle. A creamy, luxurious main course served with a 2019 Michele Chiarlo Barlo Cerequio.

Alternatively, "Agnolotti del Plin", small dumplings filled with meat and/or vegetables, tossed in butter and garnished with truffle, are an excellent accompaniment.

Chocolate flan with yellow muscatel

Of course there is dolce to round off a meal in Piedmont. For example, a "Bunet Piemontese", a chocolate flan with amaretti and rum, a classic dessert, deliberately without truffles, to round off the evening. The Piedmontese serves a Moscato d'Asti with it. We opted for a Gelber Muskateller Frizzante from Hirtl from our portfolio - also Muscat, also finely sparkling, also fresh and sweet.
