Austria's climate is characterised by continental influences, with cold winters, warm summers and sufficient rainfall, which leads to a long ripening period and a high concentration of fruit in the grapes.
The quality pyramid of Austrian wines is organised as follows:
- At the top are the wines labelled "DAC" (Districtus Austriae Controllatus), which must fulfil the strictest quality criteria and are typical of their region of origin.
- Below these are the quality wines, which receive a state test number seal after testing the sensory and chemical parameters.
- This is followed by the country wines, which also have to fulfil certain quality requirements, but meet less stringent criteria.
- Finally, there are table wines, which do not have to fulfil any particular geographical or quality requirements.
