Pinot Noir, or Pinot Noir, is a red grape variety that is widespread throughout the world today and is also the basis for some of the rarest and most exquisite wines in the world. The variety has a very long tradition of excellence, particularly in France (especially in Burgundy) and Germany (on the Ahr and in Baden). Pinot Noirs are elegant to medium-bodied, with moderate to high tannins, depending on the ageing process, and moderate acidity to a distinctive freshness. Pinot Noir wines typically show aromas of red fruits such as cherry, strawberry and raspberry, complemented by notes of spices as well as hints of forest floor and mushrooms. Premium qualities are almost always matured in wooden barrels to round off the flavour and tannin structure. This allows Pinot Noir to develop unrivalled finesse and complexity. It is an excellent accompaniment to strong poultry preparations, but also to stews and game dishes, especially game birds. However, the wines often need time to mature in order to develop their full potential. Pinot Noir is now also an important grape variety for premium wines from New World regions such as California and New Zealand.
