Charles Ballot, a 15th-generation winemaker, uses no more than 25 per cent new oak for his natural-style white Premier Crus, which are produced in accordance with the lunar calendar. He is considered part of the "new school' on the Côte de Beaune and favours finesse, Chardonnay elegance and terroir expression over the exuberant, often oaky opulence of days gone by.
