The 2016 "Brut Blanc de Blancs? spent seven years "sur lattes? on the lees. The mousse is correspondingly fine. Beyond that, this English Sparkling offers a mélange of wet stone, lemon juice and zest, lime, oyster shell, and herbs. On the palate, the wine is creamy, fine, lively, and compact.
