Since 1818 the house at Mareuil-sur-Aÿ has stayed in the same family; Mathieu Roland-Billecart now runs it in the seventh generation. Le Rosé counts as a benchmark among rosé Champagnes, a blend of Chardonnay (45%), Pinot Noir (35%) and Meunier (20%). Part of the Pinot Noir is vinified as red wine and added to the blend. Cellar master Florent Nys ferments the base wines cold in stainless steel, the cuvée then spends 36 months on the lees, and the dosage stays at extra brut level. A pale salmon pink in the glass, with fine, persistent bubbles. Wild strawberry, raspberry and citrus zest on the nose, with a floral touch behind them. Creamy texture on the palate, clearly drawn red fruit, a long finish on raspberry. We pour it as an aperitif, with shellfish and raw fish.
