Thienot x Penfolds Chardonnay Pinot Noir Gift box 2012

This Champagne comes from the collaboration of Thienot with Peter Gago of Penfolds, who began his career with sparkling winemaker Ed Carr. It is a cuvée of 50% Chardonnay from Vertus, Mesnil-sur-Oger, and Cramant, and 50% Pinot Noir from Verzenay, Tauxières, Aÿ, Cumières, and Avenay Val d'Or. With 6.7 g/l acidity and a pH of 3.02, a dosage of 4 g/l was applied. The Champagne shows a deep straw-yellow color and a beautifully composed nose of creamy lemon curd, dried nectarines, roasted almonds, and bread crust. On the palate, it feels deep and full-bodied, with a powdery tannin and a long finish marked by grapefruit and almonds.
