The name says it all. This wine was produced entirely without data analysis or technical aids. In this labour of love by Piero Incisa della Rocchetta, he used only his "eyes, nose, palate and mind'. The biodynamic grapes were spontaneously fermented in 600-litre barrels, and after the fermentation cycle was complete, only the free-run juice was transferred to used barriques for eleven months. No sulphur was used: "Sin Azufre'. It is an open, lively, balanced and delicious Pinot Noir with fine-grained tannins, notes of red and dark berries, cherries, dark chocolate and spices. But what is particularly impressive is the sheer energy of this wine.
