Côtes du Jura Chardonnay Sous Voile Domaine Macle Jura 2018

The "Côtes du Jura Tradition' is indeed one of the great traditionally vinified wines of the Jura. The Chardonnay (80%) was vinified sous voile, i.e. oxidatively, for three years in small wooden barrels. Added to this is 20% Savagnin from "Château-Chalon'. Despite its power, opulent body and oxidative, nutty aromas, the wine is surprisingly fresh, as it has a precise, almost crystalline acidity. Added to this is an aromatic, salty-iodine intensity with hints of quince, lemon zest and ginger. A wine for decades, it pairs excellently with mature cheese, smoked fish and chicken with cream sauce and morels.
