In this case, that role is taken on by the tannin-rich quince. It also provides the necessary acidity and – last but not least! – citrusy, apple-like fruity notes. The fruit's tartness is balanced by the floral, mellow character of the white tea. The resulting intriguing interplay is complemented by a sweet note from Tahitian vanilla. Finally, carbonation provides a fine effervescence and a zesty refreshment.
