Bairrada sits close to the Atlantic, on clay and limestone, with cool nights and humid air. At Quinta de Baixo, Dirk Niepoort carries on the estate's sparkling wine tradition. He has been running it himself since 2013 and farms it biodynamically. Água Viva, meaning living water, comes from old vines of Maria Gomes, Bical and Cercial. The base wine ferments in stainless steel, the second fermentation takes place in the bottle, followed by five years on the lees. Disgorged in October 2024. In the glass, a pale citrus yellow with a fine, persistent bead. Fresh, layered aromas led by citrus notes that reflect the Bairrada terroir. Lively on the palate, with bright acidity and a long finish. A food-friendly sparkling wine that we open with fish, shellfish and poultry.
