After André and Mireille Tissot had done the groundwork, it was Bénédicte and Stéphane Tissot who made a significant contribution to the Jura wine regaining its deserved place on the world's wine lists.
Well into the 19th century, wines from the Jura were still in great demand. However, the phylloxera catastrophe and the rural exodus that began at that time ensured that only a tenth of the vineyards and the many grape varieties of the Jura remained in the 20th century. It took people like Stéphane Tissot, who tirelessly and open-mindedly popularised Jura wine again. In addition to the classic oxidatively matured wines, for which the "Vin Jaune" and the "Château-Chalon" stand, he also focussed on reductively matured wines. Tissot works with the classic Savagnin, Trousseau and Poulsard varieties as well as with Chardonnay and Pinot Noir, which have long been native to the Jura.
he began working certified organic in 1992 and biodynamically since 2003. His approach is so meticulous that most of his wines are bottled completely without additives, i.e. without sulphites, and can still mature for a long time. Although he now cultivates 50 hectares, his wines are often rare, as he consistently keeps yields low in favour of quality. They are characterised by an impressive freshness and enormous drinking pleasure, without losing depth, power and complexity. They are wines that are characterised by a great personality and develop just as full of character.
