The Château de Saint Cosme in the Gigondas appellation was acquired by the family in 1490 and is now run by the fifteenth generation of the Barruol family. Completely preserved Roman fermentation vats carved into the rock bear witness to the even deeper historical roots of viticulture at this location.

The château has 25 hectares of vines, with plants that are on average 60 years old and only produce low yields. The terroir of Saint Cosme is characterised by limestone marl, which is rare in this region, as well as clay and sand. A cool microclimate allows for a late harvest.

Louis Barruol's father started organic farming back in 1972 "out of respect for his vines, to produce clean wines and to protect the ecosystem in the Saint Cosme valley."

It goes without saying that weedkillers, chemical fertilisers, pesticides and synthetic agents are still not used today.
