Aguila Cremant Rosé

65% Chardonnay, 20% Chenin and 15% Pinot Noir from clay-limestone and gravel soils form the basis for this Crémant de Limoux – a sparkling wine from a region that, according to historical records, was known for its sparkling wines more than a century before Champagne. The delicate salmon-pink cuvée matures for 12 to 15 months during the second fermentation "sur lattes' – developing not only its finely sparkling mousse but also those typical autolysis notes, which are then reflected on the palate as brioche and fresh toast. Alongside this are plenty of white-fleshed fruits – pear, peach with a hint of nectarine – and a refreshingly crisp acidity. A fine accompaniment to salmon tartare or grilled turbot on a summer terrace.
