Domaine Simonnet-Febvre

"One of the oldest houses in Chablis"

Simonnet-Febvre is one of the oldest houses in Chablis. Initially, it was primarily famous for its Crémants, but has long since become famous for its classic Chablis.
Founded in 1840, the estate includes vineyards in Chablis, Chablis Premier Cru Mont de Milieu and Chablis Grand Cru Les Preuses, but also in Grand Auxerrois and Saint-Bris with the only classified Sauvignon Blancs in Burgundy, as well as in Chitry and Vézelay and in Irancy, where the rare César variety can also be found alongside Pinot Noir.

The vineyards are predominantly located on the classic Kimmeridge limestone formations, which give the wines their typical salty minerality and firm structure. Accordingly, the Chablis from Simonnet-Febvre display a clear, cool style with citrusy fruit, fine flavour and precise acidity. At the same time, the estate's crémants - often made from Chardonnay and Pinot Noir - demonstrate a sure instinct for balance, freshness and finesse.
In 2003, the winery was taken over by the famous Domaine Louis Latour, which was able to invest further in quality and precision without changing the character of the house. Today, Simonnet-Febvre stands for a classic, straightforward style that takes its origins seriously while always remaining accessible.
