Domaine Xavier Monnot is one of the best-known wine estates in the Côte de Beaune. Located between Beaune and Maranges, it is now in its sixth generation of winegrowing. Xavier took over the domaine in 1994 after studying oenology and pursued the goal of sustainably improving quality through a new combination of traditional and modern methods right from the start.
To this end, the plots of the 17 hectares of vineyards were and are planted with old vines and new clones. The average age of the vines is 30 to 40 years. Only damaged or weak plants are replaced, but never more than a third of a plot. The older vines bring strength and complexity, the younger ones juiciness and fruit.
