Domaine François Raveneau combines uncompromising vineyard management with a precise, long-lasting and terroir-driven style. Today, its wines are among the most sought-after white wines in the world. The domaine’s history began in 1948, when François Raveneau merged his family’s vineyards with those of his wife’s family to form his own estate. Whilst Chablis was still largely characterised by cooperatives and the sale of bulk wine in many places at that time, Raveneau consistently focused on bottling his own wines. Over the decades, this built a reputation that is now almost legendary. It is no exaggeration to say that, without him, Chablis would probably not have enjoyed its current reputation. The estate is situated in the village of Chablis and, since François Raveneau retired in 1988, has been run by his sons Bernard and Jean-Marie Raveneau. Despite their worldwide fame, the family’s modest and unassuming demeanour has remained virtually unchanged. You will find no advertising, high-profile appearances or prestige projects here. The focus is exclusively on the vineyards and the wines.
The Raveneaus follow a classic, artisanal approach. The vineyards are tended with great care, yields are kept low and the grapes are harvested exclusively by hand. The aim is to bring out the unique characteristics of each vineyard site in their purest form. The wines are fermented in tanks and, following malolactic fermentation, are transferred to wooden barrels in the spring of the following year, where they mature for the next 12 months. Since the completion of the new cuverie in 2013, slightly larger barrels have been used, replacing the 132-litre feuillettes that were sometimes used due to lack of space. New oak plays only a minor role and is never used as a stylistic device to influence flavour. The wines are often released later than those of many other producers in the region. They only reveal their true greatness after several years of bottle ageing, and not infrequently only after a decade or more. The domaine cultivates around eight hectares of vineyards, planted exclusively with Chardonnay. The estate comprises some of Chablis’s most famous vineyards. Particularly well-known are the Grand Crus Les Clos, Valmur and Blanchot. These are complemented by outstanding Premier Crus such as Montée de Tonnerre, Butteaux, Forêt and Monts Mains. Montée de Tonnerre, in particular, enjoys a reputation amongst connoisseurs that is hardly inferior to that of many Grand Crus. The soils consist predominantly of the Kimmeridgian limestone typical of Chablis, containing fossilised oyster shells. This geological foundation imparts the wines with their characteristic minerality, salinity and tension. Raveneau wines are among the most classic interpretations of Chablis. The wines combine concentrated fruit with remarkable precision. Typical aromas include citrus fruits, green apple, white flowers, chalk, flint and sea salt. As the wines mature, notes of honey, hazelnut, smoke and dried herbs develop. Despite their intensity, the wines never seem heavy or bulky. Rather, they are characterised by an exceptional balance that combines power, finesse and clarity.
