Paul Achs' Chardonnay was produced after hand-picking the biodynamically produced grapes by spontaneously fermenting the juice of the slowly pressed whole grapes in used 300 and 500 liter barrels and maturing it for 16 months. The result is a spicy Chardonnay with a medium yellow-green color. It is reminiscent of herbs, white flowers, stone fruit and slightly tropical notes, surrounded by the finest wood and stone. The wine, whose vines, planted in 1961, are among the oldest Chardonnay plantations in Austria, is exciting and fresh on the palate and at the same time deep, fine, tightly woven and deeply mineral and balanced.

Since 1664, everything in the Achs family has revolved around viticulture. Since 1990, Paul Achs Junior has been running the winery on the northern shores of Lake Neusiedl and has expanded it from 12 to 25 hectares of cultivated land. The vineyards are located around Gols and are spread over 40 parcels of land whose very different potential is consistently exploited.
